Sow beetroot seed direct from late March (under cloches) to July in successional batches every three weeks. Beetroot is hardy (RHS H4–H5) and one of the easiest UK vegetables — the seedlings come up reliably, the roots want little fuss, and a pull-young approach gives sweet tender beets in 10–12 weeks. What looks like a single seed is actually a cluster of 2–4 seeds, so thin seedlings to one per station. Boltardy is the standard for early sowings (truly bolt-resistant); Detroit Globe for main-crop; Chioggia for the striped slice. Pull when 5–7 cm across for the best flavour; once they get to tennis-ball size they coarsen. Store in damp sand for winter eating.
