About

Sow sorrel direct from March to May, or plant a young clump in spring, in sun or part shade — it's a hardy perennial leaf herb with a sharp lemony-sour flavour, from the wood-sorrel family (not citrus). Sorrel is very hardy (RHS H6) and crops from April right through to the first hard frosts. Cut flower stems off as soon as they appear — flowering stops leaf production and makes existing leaves tough. Pick young leaves continuously for fish sauces, soups (the classic French sorrel velouté), salads in small quantities, and an unmistakable lemony note in stir-fries. Eat in moderation: sorrel is high in oxalic acid (the source of the sour taste) which is best eaten with care if you have kidney issues or gout. Divide clumps every 4 years. Buckler-leaf sorrel (Rumex scutatus) is a smaller, milder species.

How to grow sorrel

    Choose common or buckler-leaf sorrel

    Common sorrel (Rumex acetosa): the standard UK kitchen sorrel. Large arrow-shaped leaves, sharp lemony flavour, vigorous perennial 60 cm tall when flowering. The functional choice for sauces and soups. Buckler-leaf sorrel (Rumex scutatus): smaller (30 cm), shield-shaped leaves, milder less sharp flavour, more compact and ornamental. Good for salads. Spreads more aggressively than common. Red-veined sorrel (Rumex sanguineus): striking burgundy veins on green leaves, mild flavour, mostly grown for the leaf appearance in salads.

    Sow direct or plant a clump

    From seed: surface-sow direct in March–May where you want the plant, or in modules. Germinates in 10–14 days at 10–15°C. From plant: a 9 cm or 1 L pot in spring. One plant gives a household more sorrel than it can use; two for a longer picking window.

    Plant in sun or part shade, in moisture-retentive soil

    Adaptable to most UK soils provided they don't dry out completely. Sorrel sulks and runs to flower fast in drought; moisture-retentive soil enriched with garden compost keeps leaves tender for longer. Light shade in southern England keeps the plant producing through midsummer; full sun in cooler regions.

    Pick young leaves continuously

    Cut whole leaves at the base, starting from the outside of the clump. Pick the youngest tender leaves; older leaves get tough and very high in oxalic acid. Continuous picking is the rhythm — the more you cut, the more it produces. A single clump crops from April through to October.

    Cut all flower stems immediately

    The single most important husbandry. Sorrel sends up tall reddish flower spikes from May onwards. Cut them at the base as soon as you see them, before they open. Flowering stops leaf production and makes the remaining leaves tough and bitter. With diligent flower-stem removal, the plant produces tender leaves all season.

    Water in dry spells

    Sorrel goes bitter and tough in drought. A weekly soak in dry spells keeps the leaves tender and mild-flavoured. Mulch the clump in spring with garden compost to conserve moisture.

    Divide every 4 years

    After 4 years the clump gets congested and the centre dies out. Lift in early spring or autumn, split with a spade into 4–6 sections, replant the best outer pieces in fresh soil. Compost the dead centre. Free new plants.

    Use in moderation

    The sharp lemon flavour comes from oxalic acid, which inhibits calcium absorption and can be problematic in large quantities for people with kidney issues, gout, or a tendency to oxalate kidney stones. Healthy adults: small quantities (a handful of young leaves in a sauce or salad) are fine and traditional. Cooked sorrel: turns olive-grey and softens dramatically — the classic French sorrel velouté uses several handfuls. Children, pregnant women, and people with kidney/gout issues: very small amounts only, or avoid.
