Grafted persimmons begin fruiting around their fourth or fifth year. There are two types to be aware of: astringent varieties (like Hachiya) must be fully soft and bletted before eating, while non-astringent types (like Fuyu) can be eaten crisp like an apple. In cooler climates, choose early-ripening varieties to ensure the fruit matures before autumn ends. Self-fertile cultivars are available, though cross-pollination can improve fruit set and quality. The autumn display of bright orange fruit hanging on bare branches is one of the most beautiful sights in the fruit garden.
